I usually make this recipe with chicken, but I happened to have a package of tofu in the fridge so that's what I used, and a new "go-to" recipe was found! I served this with whole wheat couscous and a green salad.
Yummy Honey Tofu Kabobs
Ingredient
1/4 cup vegetable oil
1/3 cup honey
1/3 cup soy sauce
1/4 teaspoon ground black pepper
1 package of Soyganic Extra Firm Tofu,
cut into 1 inch cubes
2 cloves garlic
1 onion, cut into 2 inch pieces
1 red bell pepper, cut into 2 inch pieces
1 zucchini, cut into 1 inch pieces
10 mushrooms, sliced in half

Directions
- In a large bowl, whisk together oil, honey, soy sauce, garlic, and pepper. Reserve a small amount of marinade to brush onto kabobs while cooking. Place the veggies and tofu in the bowl, and marinate in the refrigerator 30 minutes or up to 1 hour.
- Preheat the grill for high heat.
- Thread tofu and vegetables alternately onto the skewers.
- Lightly oil the grill grate. Place the skewers on the grill. Cook for 10 - 12 minutes, or until the tofu and veggies are nicely browned. Turn and brush with reserved marinade frequently.
