The best tofu you'll ever have!

Come to think of it, deep-fried tofu is probably the best tofu you'll ever have, but this one definitely takes 2nd place.  The great thing about tofu is that it takes on whatever flavour you give it, so it's very versatile.  You can grill it, use it in a stir-fry, bake it, or even add some silken tofu to a smoothie for an extra kick of protein.  Try substituting tofu instead of meat once a week to add a lean protein to your diet.

I usually make this recipe with chicken, but I happened to have a package of tofu in the fridge so that's what I used, and a new "go-to" recipe was found!  I served this with whole wheat couscous and a green salad.

Yummy Honey Tofu Kabobs

Ingredient

1/4 cup vegetable oil
1/3 cup honey
1/3 cup soy sauce
1/4 teaspoon ground black pepper
1 package of Soyganic Extra Firm Tofu,
cut into 1 inch cubes
2 cloves garlic
1 onion, cut into 2 inch pieces
1 red bell pepper, cut into 2 inch pieces
1 zucchini, cut into 1 inch pieces
10 mushrooms, sliced in half
skewers


Directions

  1. In a large bowl, whisk together oil, honey, soy sauce, garlic, and pepper. Reserve a small amount of marinade to brush onto kabobs while cooking. Place the veggies and tofu in the bowl, and marinate in the refrigerator 30 minutes or up to 1 hour. 
  2. Preheat the grill for high heat.
  3. Thread tofu and vegetables alternately onto the skewers.
  4. Lightly oil the grill grate. Place the skewers on the grill. Cook for 10 - 12 minutes, or until the tofu and veggies are nicely browned. Turn and brush with reserved marinade frequently.
